Camp Recipe: Chili Mac

Chili Mac is a classic camping meal. It’s easy because you can make it in one pot, and many of the ingredients can be prepped ahead of time. For as simple as this meal is to make, it packs so much flavor and makes you feel like you’re really eating something delicious when you’re enjoying the outdoors.

If you want to minimize work at your campsite, you can prep all of the veggies ahead of time at home. Chop your onion and pepper, mince garlic, and pre-rinse and drain your beans. This recipe makes 2-3 servings, but I doubled it so that I would have plenty of leftovers!

Ingredients

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 small onion or 1/2 large, finely chopped

  • 1/2 green onion, chopped

  • 1/2 lb ground beef

  • 14 oz canned crushed tomato

  • 7 oz kidney beans, drained and rinsed

  • 1 1/4 cups chicken or beef broth

  • 4 oz elbow macaroni, uncooked

  • 2 tbsp chili powder

  • Salt to taste

  • 1 cup shredded cheddar cheese

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and cook until partially translucent, about 2 minutes. Add garlic and bell pepper and cook an additional 2-3 minutes until onion is completely translucent. Be careful not to burn your garlic.

  2. Add beef and break apart as it cooks, adding about 1 tsp of salt.

  3. Once beef is browned, add in all other ingredients except cheese.

  4. Cook for about 10 minutes, until pasta is cooked but still a bit firm. Al dente. Turn off heat. Adjust salt to taste.

  5. Fold in about 1/2-2/3 of your cheese. Mix thoroughly.

  6. Top with remaining cheese and cover until cheese is melted.

  7. Serve!
